For dinner: salmon stuffed with mushrooms and cheese

Dinner for tonight. Salmon and vegetable casserole.

Delicious salad i just finished
-Grilled salmon
-loads of baby spinach & mixed greens
-chick peas
-quinoa
-corn
-cucumber
-cherry tomatoes
-red onion
-Avocado vinaigrette

Amazing Crusted Healthy Salmon
Ingredients:
- 4 oz Salmon
- 1 tbsp Light Mayonnaise
- 1 tsp Dijonnaise
- 1/8 cup Panko
- 1 small bunch Cilantro
- Dash of Thyme, Basil, Black Pepper
Directions:
- Preheat oven to 400 degrees
- Chop up Cilantro finely
- Combine Panko with the seasonings and Cilantro in a bowl
- In another bowl combine Light Mayo and Dijonnaise
- Coat the Salmon in the mayo mixture and the coat with the seasoned panko
- Place on a non stick baking sheet
- Bake for 20 minutes, after the first 10 minutes flip over.
Nutrition:
- 8 Points Plus
- 440 Calories
