Home/making meals

Hey guys! I came home for the day so that I could make Anton of make ahead meals to take back to college with me. Having food prepared and portioned is a better alternative to eat prepackaged frozen meals! This is what I am making for the week:

-egg muffins
-salads
-baked salmon
-baked stuffed chicken
-shrimp egg rolls
-quinoa “fried rice”
-roasted brussels sprouts
-butternut squash ravioli
-zucchini lasagna

So basically I have hours of cooking ahead of me! Lol

Ingredients: 
-20 small shrimp 
-3 egg roll wrappers 
-1/2 of fresh broccoli cole slaw (or any type you can find with no dressing)
-1 tbsp soy sauce 
-1 tbsp rice vinegar 
-1 tsp ginger (fresh or ground) 
-2 tsp minced garlic 

Directions: 
-preheat oven to 350 
-combine all ingredients in a bowl (except wrappers) and let it marinade for 10-15 minutes 
-place a spoonful of mixture on to the center of the egg roll wrapper and fold according to the package. 
-bake in oven for 20 minutes or until wrapper is starring to brown. 

Nutrition for the entire recipe: 
Calories- 270 
Fat-1.5 
Carbs-38.9 
Protein-27
