Healthy Quinoa and Ground Turkey Stuffed Bell Peppers

Ingredients: 

-2 large round bell peppers

-1/4 quinoa

-4 ounces ground turkey 

-1/2 cup mushrooms

-1 tbsp finely chopped onions

-1 tbsp garlic

-1/4 organic tomato sauce

-1/3 cup light shredded cheese

-Seasonings to taste ( I used Cumin, Italian Seasoning, Salt & Pepper)

Directions: 

-Preheat oven to 400 degrees

-Start cooking quinoa as it says on package

-Chop up garlic, onions and mushrooms

-Lightly brown them 

-When they are browned add the ground turkey

-Add your seasonings on choice

-Once the quinoa is done mix in with the meat and add tomato sauce

-Let it cool off

-Hollow out bell peppers by cutting off the top and scooping the insides out

-Get a baking pan and put 1 cup of water in it (this will steam the bell peppers while they cook)

-Place the bell peppers in the baking pan and stuff with mixture

-Sprinkle cheese on top

-Bake for 30 minutes
